After I downloaded Editorial, I immediately linked it to my nvALT txt file directory on Dropbox. Is there any way to have Editorial exclude the nvALT settings files ("Notes & Settings" and "Interim Note-Changes") from the File Browser? This would prevent inadvertently modifying these two files when using Editorial.

No, that's not possible, sorry.

there is a list of file endings in the settings, don't know, what it is good for. but couldn't that be used as a filter, which files should be visible/synched?

The file extensions setting is just for determining which files are rendered with inline Markdown preview, it cannot be used to exclude files from sync or to hide them in the file browser.
