Here is a demo proof of concept app that uses one interface on the device and shows a secondary view on the TV via AirPlay and an AppleTV.
I got this working using zrzka's solution for hdmi. I've posted an example app on github that just increments the score on another screen. Hope this helps someone else looking for airplay support.
